Vinos Ambiz - Carboniferous

The Carboniferous from Vinos Ambiz is the craziest of his selection. A Grenache that is vinified using the carbonic maceration method, resulting in a complex and funky red wine. We know Fabio by now, he likes to challenge us and surprise us with his wines.

This one is a bomb! Slightly fizzy at the beginning, it has some volatile acidity, flavours of blackberry, strawberry and balsamic. We love the wine and the funk that comes with it!

Grape: Grenache/Garnacha

About the Winemaker: Vinos Ambiz is a natural wine project by Fabio Bartolome located in Sierra de Gredos, northwest of Madrid. Fabio was born and raised in Scotland by Italian parents but moved to Spain some 20 years ago where he has been making low intervention wines since 2003. Mostly described by many like a genuine and crazy character, Fabio makes truly unconventional wines made of only 100% grapes and nothing else.
